Kabaj began when the French winemaker Jean-Michel Morel married Katja Kabaj and decided to bottle wine from her family estate instead of selling the grapes. Today — 100,000 bottles a year from 15 hectares in Goriška Brda, Slovenia. Jean-Michel's style is rooted in Georgian qvevri after his trips to Tbilisi in the 1990s — skin contact on every white, long oak ageing, and a now-famous Anfora aged 12 months in a Georgian qvevri. Wine & Spirits has named Kabaj one of the world's 100 best wineries four times.
